Dave Gerardu is a seasoned hospitality professional with 44 years of life experience, born and raised in Maastricht, the Netherlands. He relocated to Florida a decade ago and has dedicated his career to the hospitality industry. Dave studied wine at the Wine & Spirit Education Trust (WSET) and has amassed diverse experiences across Michelin-starred dining, cruise ships, and approachable fine dining. His enthusiasm for wine is mainly focused on Mediterranean varieties, alongside a strong appreciation for domestic wines.

A Journey Through Michelin Stars and Global Wine Culture 

I began my wine career in 2002 at Beluga, a 2 Michelin Star restaurant in Maastricht, Netherlands, where I was introduced to luxurious wines under an excellent mentor. I worked in Michelin Guide establishments for the next decade, eventually becoming Lead Sommelier at De Leest, a 3 Michelin Star restaurant (now closed). Seeking international experience, I joined Holland America Line as a Cellar Master, learning to manage a team of sommeliers and operations on the high seas. 

In Miami, I worked as a sommelier at Byblos in South Beach, opened La Petite Maison in Brickell as Lead Sommelier, and later became Wine Director at St. Regis until the 2020 shutdown. Post-shutdown, I oversaw wine programs for CHICA and Yardbird with 50 Eggs Hospitality Group and opened Wakuda in Singapore and Las Vegas. Recently, I joined Happy Corner Hospitality, helping grow the brand and bring wine culture to life.

Adapting to Shifts in Guest Preferences and Beverage Trends  

Since COVID, guest preferences have shifted noticeably, with a decline in alcohol consumption. There’s a growing interest in exploring wine among younger guests, which may be due to increased awareness about alcohol content and health. Alcohol-free spirits and wines are gaining traction, and mocktails now receive dedicated attention from mixologists, no longer an afterthought.

 Embracing emerging technologies in chemical manufacturing requires aligning with business goals, fostering a culture of continuous learning, and prioritizing sustainability without compromising operational integrity 

Crafting Memorable Moments Through Guest Connection

Listening to the guest is critical. This means asking the right questions: the occasion, previous visits, and wine preferences. Before recommending a wine you’re passionate about, understand what they enjoy—whether they’re open to an adventure or prefer familiar choices. Build trust, remember preferences, and create moments of surprise and delight with regulars.

Curating a Wine List for Unique Venues: Cruise Lines vs. Fine Dining 

For a cruise line, consistency is essential. Specialty restaurants may offer fine dining, but fleet-wide consistency and weekly restocking at port limit options. In fine dining, understanding the concept and cuisine is key: Italian cuisine calls for Italian wines, French for French. Consider the space for wine storage, temperature control, and a balanced price range—ensuring options for all guests

Staying Ahead in Wine and Hospitality: Trends, Learning, and Guest Experiences 

I stay current through podcasts, reading, attending industry events, and visiting other restaurants. Talking to importers also keeps me ahead. I see the low-alcohol trend continuing, benefiting wine sales. Younger generations value firsthand stories over apps like Vivino, while wineries increasingly focus on sustainable practices like natural and carbon-neutral wines. For hospitality, the goal is to balance profitability and memorable experiences amid inflation. In Miami’s competitive market, guests want more than just food, especially with continued demand for delivery and to-go orders. 

Advice for Aspiring Professionals in Wine and Guest Experience Management 

My advice: stay humble and keep learning. There’s no end goal—you must keep evolving, as today’s insights may not hold in six months. Listen to experienced voices, but don’t hesitate to shine your light. Visit wine regions, invest in yourself, and remember: when you think you’ve figured it out, there’s always more to learn.
